Our vision of biodynamic viticulture

Boldness and authenticity are at the heart of our winemaking approach. We craft wines without compromise, true to our convictions, for your pleasure as well as ours.

The vine is at the center of all our attention. Our approach naturally favors low yields to promote optimal grape quality, in perfect harmony with nature's cycles.

The Dietrich family has anchored its ecological convictions at the very heart of its winemaking. Our objective is simple: minimize our environmental impact while revealing the essence of our terroir. Passionate about our grape varieties and deeply committed to respecting all living things, we invite you to discover a different vision of viticulture.

From Vine to Wine: Our Natural Approach

Jean is the guardian of our precious nectars within the family estate. In his underground realm, each vat is cherished like a treasure, playing an essential role in creating our distinctive wines. Between stainless steel tanks, majestic oak casks, and intimate barrels, each vessel brings its unique signature to our wines, offering a palette of expressions to satisfy every palate.

Innovation Serving Tradition: Our cellar naturally maintains a constant temperature of 14 degrees throughout the year, without heating or air conditioning. These optimal conditions ensure ideal preservation of our wines, with the utmost respect for the environment.

Our minimalist approach favors authenticity. Fermentations occur spontaneously thanks to our house-made starters, crafted exclusively from our grapes. True to our minimal intervention philosophy, we limit sulfite use to homeopathic doses, only when necessary during bottling.

Our Terroirs

Here, each plot tells a different story: that of a soil, a light, a wind or a stone.

5 Villages, 5 Terroirs

In the heart of the Vosges foothills, the vines extend across five villages with distinct identities. This mosaic of terroirs gives our wines unique richness and complexity, a faithful reflection of Alsatian diversity.

Part of the vines flourish on sandy-gravelly soils, poor and well-drained, which force the vine to plunge its roots deep in search of essential nutrients. The terroirs of Blienschwiller and Dambach-la-Ville stand out for their clay soils, particularly favorable to the aromatic expression of Sylvaner. A third emblematic terroir is sandstone, abundantly present on the Hahnenberg, which gives wines finesse and minerality.

The Schieferberg – literally "schist mountain" in Alsatian – is located in Bernardvillé. This unique terroir magnifies the aromas of Riesling, bringing it beautiful salinity. Finally, the Grands Crus Frankstein and Rittersberg, resting on deep granitic soils and subsoils, give birth to wines with structured acidity and pronounced elegance. These prestigious hillsides offer refined Rieslings, but also remarkable Gewurztraminer and Pinot Gris.

A Family Team Passionate about Natural Wine

Domaine Achillée is the result of family work by three talents convinced by biodynamic viticulture.

Estate History

For the Dietrich family, it all began in Dambach-la-Ville in 1620.

This date, engraved in the stone of the old cellar, is a bit like our birth certificate. The house has been rebuilt several times since then, but the cellar has never moved. It is the beating heart of the family—four centuries of history under the vaults.

For a long time, people here made a living from mixed farming.

A few cows, horses, chickens in the yard, rabbits, pigs... and of course, a few vines. Back then, wine was just a little extra, “a little butter in the spinach,” as my father used to say. It was sold in barrels, often shipped north to Europe via the Rhine—where there were no vineyards, but plenty of wine lovers.

From generation to generation, the plots were divided and shared between brothers and sisters, until they became small pieces of land—sometimes barely a few acres. This is how the grand crus were fragmented, but each piece of vineyard retained its soul.

In the 1960s, my father decided to devote himself entirely to wine.

At that time, there were no supermarkets or large retailers. People came directly to the cellar, tasted the wine, chatted, and left with their trunks full. It was simple, human, and it brought life to the village. During the harvest, friends, neighbors, everyone came to lend a hand. We sang, we laughed, we celebrated. Ten days of work and conviviality, leaving behind fond memories and a few good bottles of wine.

But the family's history is also one of journeys and returns.

At the beginning of the 20th century, some left to try their luck in America. One of them returned, but his brothers and sisters stayed there, in Canada and the United States. We even went to visit them in 1989—they were almost 100 years old, and their only regret was never having returned to Alsace.

On my mother's side, wine was also in the blood. My grandfather ran a restaurant in the village. He served his own wine at the table and, apparently, he loved good food as much as he loved beautiful cars. He was the first person in the village to own one—even before the doctor! He was a true bon vivant.

And then, the years passed. In 1990, it was my turn to take up the torch.

Originally, it wasn't meant to last: ten years, just long enough to raise the children, before hitting the road again. But once we got our hands back in the soil, felt the seasons, saw the grapes ripen... it was impossible to walk away. It became our life's work.

The vineyards have grown, thanks to the trust of our elders who passed on their vines to us, and the estate has flourished. Today, the estate is managed by my sons, Jean and Pierre. And everything we do is guided by this spirit: respect for life, passing on knowledge, and sincerity.

Yves Dietrich.

Here at Domaine Achillée, each bottle tells a little bit of this story: that of a family who has always kept their feet on the ground... and a glass in their hand.

The Team

Discover those who bring our estate to life every day

Domaine Achillée is above all a human adventure. Each team member brings their passion, energy and expertise so that our wines best reflect our terroir. From the vineyard to the cellar, we work together to create living and authentic wines to share.

Yves Dietrich

I belong to the generation that planted roots, often without imagining how far they would grow. The land has been my companion on this journey, demanding but generous. With my sons, I have learned to listen differently to what the vines whisper, to let them speak. Today, I see in their actions the continuation of a dream: that of a wine that is alive, free, and deeply human.

Pierre & Jean Dietrich

Alongside my brother, I am just one of the musicians in a symphony orchestrated by Nature. My role is to be the discreet amplifier, revealing the melody that previous generations whispered, and which biodynamic vines express with such force. My impact is fleeting, but the resonance I seek to create in our wines—between sky and roots—is an echo that I hope will be lasting. Each vintage is a new note, played in harmony with the cycles of life.

Pierre Dietrich.
